I love making this salad in the summer because I don't have to turn the oven on, just the burner to heat up the pasta. It's quick and easy and is my twist on a traditional italian caprese salad. Enjoy!

Ingredients For italian tortellini salad

12 oztri-colored tortellini

1 cfrozen edamame, thawed

1 cgrape tomatoes, halved

1/4 cbasil leaves, torn
-
1/2 cfresh mozzarella balls

1/2 colive oil, extra virgin

1/3 cbalsamic vinegar
How To Make italian tortellini salad

1Cook tortellini according to package instructions. Drain into a colander.

2Combine cooked tortellini, edamame, grape tomatoes, basil leaves, and mozzarella together in a large bowl.

3Combine olive oil and balsamic vinegar in a smaller bowl. Mix until well combined. Pour over the salad and toss. Serve warm.
