Ingredients For a yummy macaroni salad

  • 3
    eggs, room temperature
  • 1 Tbsp
    white vinegar
  • 1 1/2 c
    mayonnaise
  • 1 c
    creme fraiche (i used sour cream)
  • 2 Tbsp
    softened cream cheese
  • 1/2 c
    shredded cheddar cheese
  • 1/2 tsp
    garlic powder
  • 1 Tbsp
    sugar
  • 1 tsp
    celery salt
  • 1/2 tsp
    white pepper
  • 1 Tbsp
    dijon mustard
  • 2 Tbsp
    champagne vinegar
  • 1 Tbsp
    capers, drained
  • 1/2 c
    frozen peas
  • 1/4 c
    minced celery
  • 1/4 c
    chopped scallions
  • 1/2 c
    drained and chopped, roasted red peppers
  • 4 Tbsp
    sweet pepper relish (not the green relish you put on hot dogss)
  • 1/2 c
    sliced black olives
  • 1 lb
    favorite pasta, uncooked

How To Make a yummy macaroni salad

    Hard boil 3 eggs; peel, chop, and set aside.
  • mix mayonnaise, Creme Fraiche, (I used sour cream) and cream cheese.

    In a medium bowl, mix mayonnaise, sour cream (or creme fraiche), and cream cheese, until smooth.
  • mix all ingredients

    Add all other ingredients, except pasta.

    Fold in chopped eggs and refrigerate.

    Cook pasta according to pkge. directions. Drain thoroughly, but do not rinse or cool.

    In a large bowl, place drained hot pasta. Add mayonnaise mixture to hot pasta and stir to combine.

    Spread pasta salad onto a cookie sheet and cover with plastic wrap. Refrigerate for 2 hours. When pasta salad is cooled, spoon into a serving bowl, and serve.
