This goes well with my Colorado Sloppy Joes, is easy to make and tastes delicious! Like it all on it's own for lunch:)

Ingredients For walnutty coleslaw

  • 1/2
    head chinese cabbage or bok choy, sliced
  • 1/2
    head red or purple cabbage, shredded
  • 1-2
    gala or green apples, seeded, and chopped fine
  • 2
    stalks celery, washed trimmed, and finely chopped
  • 2
    carrots, grated
  • 1/2
    red onion
  • 1/2 tsp
    celery seed
  • 1/2 tsp
    coarse salt (or to taste)
  • 1/2 tsp
    stone ground mustard
  • 3/4 c
    real mayonaise
  • 1/4 c
    rice vinegar
  • 1/4 c
    sugar (i tasted mine and added a sprinkle more at the end)
  • 1/2 c
    finely chopped walnuts or almonds

How To Make walnutty coleslaw

  • 1
    Take the last 6 ingredients--without the nuts- and combine stirring well to make dressing.

    Combine the veggies and chopped fruit -mix well.

    Add the dressing and nuts in layers to the veggie, fruit mixture to incorporate well.
  • 4
    Refrigerate at least 2 hours to chill well--and enjoy!
