Tabbouleh Salad (also known as Tabouli) is a delicious Mediterranean salad with fresh parsley, mint, tomatoes, cucumbers, scallions, and bulgur wheat all tossed with lemon juice and olive oil. The end result is amazingly tasty with all wholesome ingredients and a slightly chewy texture from the bulgar wheat. I love to serve this salad with Chicken Shawarma and Baba Ganoush with fresh pita chips. It is such a power packed healthy salad with tons of flavor, texture and aroma.

Ingredients For tabbouleh salad

  • 1 c
    bulgur wheat
  • 1 c
    boiling water
  • 3 c
    finely chopped fresh curly parsley (about 2 large bunches)
  • 1/4 c
    finely chopped fresh mint
  • 1/2
    english cucumber finely diced
  • 2
    roma tomatoes finely diced
  • 1/3 c
    chopped green onions
  • 4 Tbsp
    fresh lemon juice
  • 1/3 c
    olive oil
  • salt and pepper to taste

How To Make tabbouleh salad

    In a medium bowl combine bulgur wheat and boiling water. Let soak for 1 hour and drain well.

    Combine the bulgur wheat, parsley, mint, cucumbers, tomatoes, and green onions. Sprinkle with lemon juice and olive oil. Toss gently to coat.

    Season with salt and pepper to taste. Refrigerate for 1 hour and toss again right before serving.
