Summertime is the best time for fresh tomatoes. Going to your local farmers' market can be a treasure trove of different tomato varieties. Try them all in this version of Caprese Salad! If you don't have enough tomatoes, serve this over a bed of lettuce.

Ingredients For heirloom caprese salad

  • 16 oz
    heirloom cherry tomatoes ( 1 pint)
  • 1/2 c
    olive oil, divided
  • flaky sea salt, to taste
  • 2 lb
    tomatoes - various kinds, cut in wedges
  • 1/2 lb
    fresh mozzarella cheese
  • freshly ground black pepper
  • basil leaves, torn
  • rustic italian bread
  • balsamic vinegar, to drizzle on

How To Make heirloom caprese salad

  • 1
    Halve cherry tomates, then toss them with 1 Tbsp. oil in a small bowl; season with salt.

    Arrange tomato wedges on a platter, slightly overlapping; season generously with salt. Tear cheese into small pieces and arrange them over tomatoes.

    Spoon cherry tomatoes over the top and drizzle with most of the oil; season with pepper. Let stand 30 minutes to let flavors meld and release juices from tomatoes and mozzarella.

    Top salad with basil and additional salt and oil, if desired. Serve with bread.
