food processor (or mandolin) winter salad

Like so many of my original recipes, this one started with me checking to see what is in my fridge. I also wanted to use my new Breville Food Processor. This also qualifies as very healthy and very quick. If you want a creamier texture you could use more mayo, but I liked the crunchy texture of the salad. Healthy food, tidy vegetable crisper, cat asleep by the fire, sunshine = a good day.

Ingredients For food processor (or mandolin) winter salad

  • 3 md
    carrots (cut into 3 inch chunks for the processor)
  • 1 sm
    broccoli head + some stem (about 3 inches across)
  • 1
    apple (cored but unpeeled)
  • 1 Tbsp
    onion, finely chopped
  • 1 stalk
    celery (cut into 3 inch chunks for the processor)
  • 1/3 c
    chopped pecans or walnuts
  • juice of 1/2 lemon
  • 3 Tbsp
    mayonaisse
  • salt and pepper to taste
  • 1/3 c
    raisins (optional)
  • 2 Tbsp
    chopped parsley (optional)

How To Make food processor (or mandolin) winter salad

    Using a medium grater blade process the carrots, celery, broccoli, and unpeeled apple. (Don't use a very fine blade or you will have mush).

    Put the grated vegetables and apple in a medium sized bowl and add the lemon juice and the mayonnaise. Mix well and add the pecans and raisins (if using). Mix and taste for seasoning. Add salt and pepper if you wish (I added only 1 tsp.) Mix again and refrigerate for an hour to allow flavours to blend and develop.

    Sprinkle chopped parsley on top to serve.
