Many times I watched my mother make her wonderful deviled eggs and I memorized the ingredients, if not the exact measurements. These measurements are a close estimate, but you may adjust to suit your own taste.

Ingredients For ellen's mother's deviled eggs

  • 8 md
    eggs, hard boiled
  • 2 Tbsp
    hellman's mayonnaise
  • 1/2 tsp
    yellow mustard
  • 1/4 tsp
    white vinegar
  • 1/8 tsp
    sugar
  • salt and pepper to taste
  • pinch
    paprika

How To Make ellen's mother's deviled eggs

    Place 8 eggs in large pan. Fill with enough water to cover eggs. Bring to a boil over medium to high heat. When they start to boil, reduce heat and simmer for 15 minutes, uncovered.

    Rinse eggs under cold water until cool enough to handle. Peel and cut in half lengthwise.

    Carefully scoop out yolks and place into a medium bowl. Gradually add remaining ingredients to yolks (except paprika), stirring frequently and don't forget to taste-test until flavor is to your liking. Add ingredients slowly--you can always add more but you can't subtract once it's been added.

    When filling is ready, spoon into empty egg white halves. Score with the back of a fork and sprinkle with a light dusting of paprika.
