Egg salad was one of my favorite sandwiches growing up. Nothing fancy...just good! Hubby requested some to take to work..so here it is.. My pictures.

Ingredients For egg salad

12hard boiled eggs
-
1/4 cminced onion
-
1 lgpickle diced, or 2 tbsp dill relish, drained well

1/2 tspsalt
-
1/2 tsppepper
-
1/2 tspdry mustard
-
1/2 tspprepared mustard
-
1/2 tspdried dill
-
3/4 chelmanns mayonaisse or your favorite

paprika for garnish
How To Make egg salad

1Place eggs in a large saucepan. Cover them with cool water by 1 inch. Slowly bring water to a boil over medium heat; when the water has reached a boil, cover and remove from heat. Let sit 12 minutes. Transfer eggs to a colander; place under cool running water to stop the cooking. Eggs can now be peeled.

2When eggs are cool: I use a grater and grate the eggs on the smallest holes. Will be a fine grate. You can smash them with a fork. I have also used my food processor. Add the next 8 ingredients, stir well. I then taste to see if spices need adjusting.

3Place in a covered container, and chill till ready to use.
