I have seven children - all with different likes and dislikes. Half are vegetarian. Some more vegetarian than others :) But all of them love this salad and ask for it all the time. The presentation is beautiful and tastes so good! I teach my children, presentation is everything in cooking. At least I try, doesn't always come out the way I like. Anyhoo, this is a lovely, fresh, healthy salad. Did I say it is pretty too? ;)

Ingredients For cucumber & tomato salad caprese

    large red tomato, sliced (round slices)
  • 1
    large yellow tomato, sliced (round slices )( or two red )
  • 1
    medium cucumber, sliced (round)
  • 8 oz
    fresh mozzarella cheese, sliced (round)
  • 2 Tbsp
    extra-virgin olive oil
  • 1 Tbsp
    lemon juice ( squeezed fresh )
  • 1/8 tsp
    fresh ground pepper
  • 1/8 tsp
    salt
  • 1/3 c
    coarsely chopped fresh basil or lemon basil

How To Make cucumber & tomato salad caprese

    On a large serving platter, arrange slices to make four colums, vertically, overlapping slightly in a single row. Red tomatoe slices - one row, cucumber slices - next row, yellow tomatoe slices -another row, and mozzarella slices outside row. Or if you have a good eye, mix them up - whatever looks good to you.

    In a small bowl, combine oil, lemon juice, salt and pepper, mix well. Drizzle over salad. Sprinkle basil on top. Serve.
