It's time round these parts for FRESH garden veggies! I have some burpless cucumbers, combined with fresh garden tomatoes, onions and banana peppers for my take on cucumber, tomatoes and onion salad. My version uses flavor infused vinegar, in addition to the typical distilled vinegar, for a tangy bite of twang that doesn't overpower the vegetables. The little extras will leave your taste buds happy! I hope you enjoy this recipe as much as we do!

Ingredients For cucumber, 'mater and onion salad

  • 1/2 c
    white vinegar
  • 1 c
    water to cover
  • 2-3 md
    cucumbers
  • 1 md
    onions, yellow, medium
  • 2-3 md
    tomatoes
  • 1-2 md
    banana peppers
  • 1/4 c
    flavor infused vinegar (i use coconut or pineapple)
  • salt and pepper to taste

How To Make cucumber, 'mater and onion salad

  • Sliced Tomatoes, cucumbers and onions and banana peppers in a bowl.

    Peel and slice the cucumbers and onions. Slice the cucumbers, onions and banana peppers in thin round slices. Cut the tomatoes in wedges and place all of the vegetables in a bowl large enough to cover with the vinegar marinade.
  • Sliced Cucumbers, onions, banana peppers and tomatoes in a vinegar marinade.

    Mix together the vinegar(s)l, water and salt and pepper to taste. Cover the vegetable mixture with the liquid, cover and let sit for at least an hour before serving. Use more water to cover, or add more vinegar to taste. The dish becomes more flavorful the longer it marinates.

    There are many varieties of flavored vinegar to choose from. We live in Southern Indiana and love the infused vinegar from Galena Garlic Company, located in Historic Madison Indiana.
  • Fresh garden cucumbers,  tomatoes and onions, in a vinegar base marinade.

    You can omit the flavored vinegar and substitute with more white vinegar or a dash of apple cider vinegar if you like, to give it a different twang. My Grandmother always added a dash of Sweet N Low to her batches to cut the tartness, it sounds strange but it doesnt leave an aftertaste and makes it a bit sweet and even more delicious!
