~ crunchy crab salad for 2 ~

I used what I had on my refrigerator for this yummy salad and the addition of cauliflower was a wonderful addition. It gave a wonderful crunch to the salad, hence the name. This salad can be doubled or tripled easily for your needs. Goes great as a side to a burger or as a meal itself. We loved it! Enjoy!

Ingredients For ~ crunchy crab salad for 2 ~

  • 8 oz
    imitation crab meat, chopped or fresh
  • 1/2 c
    frozen sweet peas, thawed
  • 1/2 c
    fresh cauliflower, chopped
  • 1/4 md
    red onion, minced
  • 1/4 c
    celery, small chopped
  • 1/4 - 1/2 c
    shredded cheddar cheese
  • 1/2 tsp
    old bay seasoning or to taste
  • 1/2 c
    plus 2 tablespoons - real mayonnaise
  • 1/4 tsp
    black pepper

How To Make ~ crunchy crab salad for 2 ~

    In a medium bowl, add chopped crab, onion, celery, seasonings, peas, cauliflower and cheese. Toss together and fold in the mayonnaise. You may want more or less mayonnaise, up to you. My proportions were just right for our taste. Sprinkle the top with more bay seasoning and chill for at least an hour so the flavorings can permeate.
