    large red bell pepper, diced 1/4 inch

    medium red onion, finely chopped

    defrosted frozen corn
  • 4 oz
    monterey jack cheese, cubed small
  • 2 Tbsp
    chopped parsley
  • few drops hot pepper sauce, to taste
  • optional lettuce leaves for garnish
