I had this dish several years ago at a restaurant that we visited on our way back from Las Vegas. It was hot outside and this salad was cold and fresh. It really was delicious. As soon as I got home, I had to try and recreate it.

Don't let the term ceviche scare you. Simply, ceviche is a dish made from chopped seafood that's marinated in fresh juice (like lime or lemon) and spices. As the dish marinates, the seafood absorbs the flavors and becomes opaque. This version uses shrimp and it's a refreshing salad. Simple to make, it's tangy with a kick of spice. Ingredients

  • 3 large
    tomatoes, chopped
  • 1 bunch
    fresh cilantro, chopped
  • 3 small
    limes
  • 1 lb
    shrimp (cooked, no tail); chopped
  • 1 large
    sweet yellow onion, diced
  • 2 medium
    fresh jalapenos, deseeded and diced
  • 2 pinch
    sea salt
  • 2-3 clove
    garlic, minced
  • 1 large
    avocado
  • 1 Tbsp
    olive oil
  • 1 dash(es)
    white wine vinegar

How to Make Ceviche Salad

Step-by-Step

  1. In a large bowl add chopped tomatoes, cilantro, sweet onion, seeded jalapenos, garlic, and shrimp. Add sea salt, olive oil, a dash of white wine vinegar, and lime juice into a bowl. Mix well.
  2. Add chopped avocado and mix again. Taste to see if you need more salt or more lime juice. Best to let it sit in the refrigerator for about 30 minutes before serving. Serve over an avocado half with crushed tortilla chips on top.
