Fast and easy as well as healthy. I've added fresh chives out of my yard as well. It all comes together devilishly good.

Ingredients For black bean and pepper salad with cilantro and lime
- DRESSING:

2 Tbspolive oil, light

1/4 tspground chipotle pepper

1/2 tspchile powder

1/2 tspground cumin

1/2 tsponion powder

1/4 tspsalt

fresh ground black or white pepper to taste
- SALAD:

1 can(15 oz) black beans, rinsed well and drained

3/4red pepper, chopped
-
1/2yellow pepper, chopped

1/2orange pepper. chopped

1/2red onion, chopped

1 bunchfresh cilantro leaves,, chopped
How To Make black bean and pepper salad with cilantro and lime

1Grate the zest from the lime into a small bowl, then juice the lime and add 2 tablespoons of it to the zest. Stir in the remaining ingredients; set aside.

2Combine the salad ingredients in a bowl. Pour the dressing over and stir. Serve immediately or store in the fridge, giving another stir before serving
