Ingredients For bacalhau chickpea salad

  • 1 lb
    salt cod (bacalhau)
  • 1/2 c
    chopped black olives
  • 1 Tbsp
    mayonnaise
  • 2 sm
    onions, thinly sliced
  • 1 can
    (14.5 oz) chickpeas, drained and rinsed
  • 2 Tbsp
    olive oil
  • 1/2 c
    chopped fresh parsley

How To Make bacalhau chickpea salad

    Wash and soak the cod in a bowl of water. Change the water 3 times over the course of 8-10 hours.

    In a saucepan, add the cod and water. Bring the water to a boil 1-2 minutes. Drain the water and tear the bacalhau into small pieces.

    In a large bowl add the pieces of bacalhau along with the rest of the ingredients. Toss the ingredients together well and serve, room temperature, or chill and serve cold.
