An easy make-ahead gelatin "jello" salad. A great sweet salad side dish or dessert to take to potlucks or serve for the holidays.

  • 2 pkg
    lime "jello" (3 oz. each)
  • 8 oz
    small curd cottage cheese
  • 20 oz
    can of crushed pineapple (undrained)
  • 1 c
    chopped pecans, toasted (divided, 1/4 cup)
  • 8 oz
    small cool whip (thawed)
  • 1/4 c
    sweetened coconut flakes

How to Make Lime Jello Salad


  1. Combine first four ingredients. Stir well. Then add 8 oz. container of Cool Whip and mix together well.
  2. Refrigerate for 1 - 2 hours before serving. I usually chill the jello salad overnight. Garnish with 1/4 cup toasted pecans and 1/4 cup sweetened coconut flakes.
