cranberry relish salad

I adapted this dish from The Fresh Market cranberry relish recipe. By adding gelatin it becomes an excellent side salad. I serve it with pork or fowl. It has become a big hit!

Ingredients For cranberry relish salad

  • 2 pkg
    whole cranberries (previously frozen are fine)
  • 1 tsp
    fresh lemon juice
  • 1
    orange zested plus one slice
  • 3/4 c
    sugar - i use raw sugar
  • 1 c
    boiling water
  • 1 pkg
    strawberry sugar free gelatin
  • 1/4 c
    chopped walnuts
  • 1/4 c
    sour cream
  • fresh mint leaves

How To Make cranberry relish salad

    Using a processor or chopper coarsely chop cranberries with orange zest, orange slice, sugar and lemon juice.

    Bring 1 cup of water to boil and in large bowl stir in gelatin. Stir until totally dissolved. Add cranberry mixture and gently blend.

    Line a 13 x 9 baking dish or pan with parchment paper. Spoon mixture in a single layer into pan. Sprinkle top with chopped walnuts. Cover and refrigerate for 6 hours or until gelatin is firm. Cut into squares to serve.

    Top with a small dollop of sour cream and garnish with fresh mint leaves.
