Ingredients

  • 1 Tbsp
    prepared mayonnaise
  • 1 tsp
    dijon mustard
  • 1 tsp
    freshly ground pepper
  • 1 tsp
    pureed canned chipotles
  • 1 tsp
    worcestershire sauce
  • 1 Tbsp
    fresh lime juice
  • ·
    few drops of hot pepper sauce
  • 1 tsp
    capers
  • 5
    anchovy fillets
  • 8 clove
    garlic
  • 1 c
    olive oil, extra virgin
  • 2 Tbsp
    red wine vinegar
  • ·
    salt and freshly ground pepper
  • 24
    romaine leaves
  • 2 oz
    parmesan cheese, shaved
  • ·
    baked or grilled croutons

How to Make Spicy Caesar Dressing

Step-by-Step

  1. Put all ingredients, except the oil and vinegar, in a food processor and process until blended.
    Slowly mix in the oil, then mix in the vinegar.
    if too thick, add a little water.
    drizzle romaine with the dressing and garnish with shaved cheese and croutons.
