I love to make my salads as beautiful as I can because it encourages me to "eat the good stuff". While I was eating my salad tonight my husband said it looked like a mountaintop, so that's what I decided to name it. LOL Hope you enjoy.

Ingredients For mountaintop salad

  • iceberg lettuce, cut through one big slice
  • italian dressing
  • 1 lg
    egg, hard boiled, matchstick cut
  • 5 sm
    pickled beets, matchstick cut
  • 2 sm
    mushrooms, matchstick cut
  • 1/2 sm
    cucumber, matchstick cut
  • 1/4 c
    garbanzo beans
  • 7 - 10 sm
    olives, whole or matchstick cut
  • 1/3 c
    cheese crumbles
  • 5
    crushed croutons
  • balsamic glaze

How To Make mountaintop salad

    Slice the iceberg lettuce horizontal into the thickness you desire. Lay down on a large plate and cover with dressing of your choice. You could use a ranch or blue cheese and then an Italian on top to have two different flavors inside the salad.

    Cut up all your ingredients and begin covering your lettuce slice with them, one by one. When all finished add your crushed croutons last. Now drizzle more dressing of choice. I used Italian and then drizzled in a circle the balsamic glaze.

    Get a fork and knife and you are ready to eat a most beautiful Mountaintop Matchstick Salad.
