A friend of mine gave me this recipe once after she had brought it for one of our company monthly pot-luck lunches. Everyone loved it and I have made it many times since. It is a quick and easy recipe and even the kids love it.

Ingredients

  • 1
    head of leaf lettuce or ice berg lettuce, torn into small pieces
  • 1 can(s)
    (15 oz) ranch style beans, rinsed & drained
  • 2
    chopped green onions
  • 2 or 3
    plum tomatoes, diced
  • 1 c
    cheddar cheese, shredded
  • 3 c
    regular frito corn chips
  • 1 bottle
    (16 oz) catalina dressing

How to Make Frito and Bean Salad

Step-by-Step

  1. Mix first 5 ingredients together in a large salad bowl.
  2. Just before serving, add Fritos and dressing.
  3. Toss gently and serve immediately so the Fritos don't get soggy.
