Chopped salmon salad

One of my favorite restaurants has a salad like this, so I had to try to duplicate it. Here it is! It's pretty darn close. Salmon, arugula lettuce, corn, couscous, dried cranberries, asparagus, tomatoes and pine nuts combine so eloquently together with a plethora of flavor in your mouth with every bite.

Ingredients

  • 1 c
    sushi grade salmon, or lox, chopped
  • 2 c
    arugula lettuce, chopped
  • 1/2 c
    corn
  • 1 c
    sautéed asparagus, chopped
  • 1/2 c
    dried cranberries
  • 1/4 c
    pine nuts
  • 1/2 c
    israeli couscous, cooked
  • 1/2 c
    roma tomatoes, chopped
  • 1/4 c
    poppyseed dressing

How to Make Chopped salmon salad

Step-by-Step

  1. Cook Israeli couscous, and saute the asparagus. Set both aside to cool.
  2. Chop asparagus, and transfer to large bowl.
  3. Combine the rest of the ingredients in the bowl, toss to combine, and serve.
    Enjoy!
