cherry pork salad, warm bacon mustard dressing

A local restaurant makes a cherry pork salad. This is my version with the addition of a warm bacon honey mustard dressing. A great use of leftover pulled pork.

Ingredients For cherry pork salad, warm bacon mustard dressing

  • 1 lb
    pulled pork
  • 1/2 c
    dried cherries
  • spring leafy mixture
  • 1 pkg
    fried onion
  • 1/3 c
    white wine vinegar
  • 1/3 c
    dijon mustard
  • 1/3 c
    honey
  • 1 sm
    onion chopped
  • 1 Tbsp
    minced or chopped garlic
  • 2 slice
    bacon
  • 1 pinch
    each; salt & pepper

How To Make cherry pork salad, warm bacon mustard dressing

    Cook and crumble two slices bacon. Using same pan; add olive oil, onion and garlic. Sautéed 2-3 minutes. Add white wine vinegar, honey and mustard. Cool on low until blended. Add crumbled bacon and set aside. Note: you will serve this warm.

    Rinse and spin leafy mixture.

    Warm the pulled pork.
  • 4
    Toss the leafy mixture with dried cherries and warm dressing. Place pulled pork and onion strings atop.
