Baja Salad

This is a great quick and easy main dish salad. Its especially good for a summer evening supper on a hot day.

I like to serve this to friends with cold iced tea and a fresh fruit dessert. Everyone seems to like it and you can adjust the spices to be as mild or hot as you like.

I found this recipe in a local church cookbook from about 5 years ago and have made it many times since then.

1 large
onion, chopped
4 medium
tomatoes, chopped
1 medium
head of lettuce, chopped
1 lb
lean ground beef
1 can(s)
(15 ounces) kidney beans, drained
1/4 tsp
1 tsp
chili powder, or to taste
1 c
french salad dressing
8 oz
shredded sharp cheddar cheese
2 c
corn chips, slightly crushed
salsa, sour cream, guacamole, ripe olives for garnish if desired

How to Make Baja Salad


  • 1Toss together onion, tomatoes, and lettuce in a large serving bowl. Set aside.

    In a large skillet brown beef and drain grease. Add beans, salt, and chili powder. Simmer for about 10 minutes.
  • 2Just before serving mix salad dressing and cheese into greens. Pour beef mixture over the greens. Sprinkle with chips and garnish as desired (use salsa, guacamole, sour cream, and/or ripe olives to garnish).
