One day my grand daughter wanted a watermelon from the grocer, so we bought one for her. After cutting it all up, I wanted to eat a watermelon salad or somethin'. . . here is what I came up with . . . I added a few fruits in it and it was the "BOMB"! It was so good that I went for seconds and then ate the rest for dessert!!!

Ingredients

  • 1 pkg
    fresh baby spinach
  • 1
    japanese cucumber, thinly sliced
  • 1 Tbsp
    fresh mint, julienned
  • 4 c
    watermelon, diced
  • 1 c
    fresh strawberries, sliced
  • 1 c
    fresh red seedless grapes
  • 1 c
    fresh green seedless grapes
  • 1 c
    cherry tomatoes
  • 1 small
    red onion, thinly sliced
  • 1/4 c
    balsamic vinaigrette
  • 6 oz
    feta cheese
  • 1
    lime, freshly squeezed
  • BALSAMIC VINAIGRETTE

  • 1/4 c
    balsamic vinegar
  • 2 tsp
    dark brown sugar
  • 1 Tbsp
    finely chopped garlic
  • 1/2 tsp
    salt
  • 1/2 tsp
    pepper
  • 3/4 c
    olive oil

How to Make WATERMELON & BABY SPINACH W/BALSAMIC VINAIGRETTE

Step-by-Step

  1. In a large salad bowl, combine all the ingredients and lightly toss salad. Serve chilled. Add more balsamic vinaigrette as needed.
  2. BALSAMIC VINAIGRETTE:
  3. In a small mixing bowl, combine all ingredients and whisk briskly until blended. Refrigerate the remaining balsamic vinaigrette.
