I was introduced to this amazing salad at a baby shower. It is simple to make and delicious!

Ingredients

  • 10 oz
    container of baby spinach
  • 1 to 1-1/2 c
    sliced strawberries (quantity is a personal preference)
  • 3/4 to 1 c
    slivered almonds (quantity is a personal preference)
  • DRESSING

  • 1/2 c
    white vinegar - i choose to use red wine vinegar
  • 2/3 c
    olive oil
  • 1/2 c
    sugar
  • 2 Tbsp
    poppy seeds
  • 2 Tbsp
    minced onion (dry)
  • 2 Tbsp
    roasted sesame seeds
  • 1/2 tsp
    paprika
  • 1/2 tsp
    cumin (my own addition)

How to Make Spinach & strawberry salad

Step-by-Step

  1. In a large bowl mix together spinach, strawberries & almonds
  2. In a blender add: vinegar, oil, sugar, poppy seeds, onion, sesame seeds, paprika & cumin. Continue to blend until all sugar has dissolved.
  3. Put dressing in an air tight container and pour on salad about 5-10 minutes before serving. The lady I got the recipe from does not recommend refrigerating the dressing as it makes the oil kind of harden. So if you prepare the day before leave dressing out on your counter.
