We really enjoy the sweetness of this dressing combined with the sweet, crunchy almonds... so much so, in fact, that this recipe won FIRST PLACE in the Just A Pinch Recipe Club Ultimate Salad Toss Contest!
What a treat for the senses this dish is. We just couldn't get enough of the light, aromatic ingredients. Oh, and it tastes darn good too. Congratulations, Marie!!

1 cchopped celerey
-
1 Tbspminced fresh parsley

2 sprig(s)chopped spring onions, including tops

1 bunchfresh spinach (ready to eat in a bag)

11 ozmandarin oranges, drained

1 cfresh sliced strawberries

DRESSING
-
1/4 csalad oil
-
2 Tbspraspberry vinegar
-
2 Tbspsugar
-
1 pinchblack pepper
-
1/2 tspsalt

GARNISH
-
2 Tbspsugar

1/4 csliced almonds
How to Make Mandarin Orange/Strawberry Spinach Salad
- Mix Celery, parsley & onions together and refrigerate.
- Drain Mandarin oranges and put refrigerate. (You can keep some of the juice to add to the dressing also if you wish.)
- Wash and dry strawberries. Slice and refrigerate.
- DRESSING: Mix ingredients thoroughly and refrigerate. (The dressing will keep for several days.) Shake well before adding to salad.
- GARNISH: To caramelize almonds, put sugar and almonds in a frying pan on medium heat and stir constantly until almonds are lightly browned. Place them on a piece of wax paper to cool.
- SERVE: Place spinach in a bowl; add the celery mixture, Mandarin oranges and strawberries, almonds and dressing. Toss and Serve!
