Nanny, my kids' great grandmother on their dad's side, shared this recipe with me 18 years ago when she lived with us. This is a nice salad that's easy to make, light, healthy, & is a wonderful way to use up any left-over chicken you may have In the fridge. Nanny was a cook in the school cafeteria, and this is a salad she made for the teachers once a week. It's a nice dish for a busy weekend, summer lunch, or nice addition to a pot luck. I even make the salad without the chicken to have as a side dish. It's versatile, & just about any chicken goes well with it. Hope you enjoy it!

Ingredients For nanny's chow mein chicken salad

    head lettuce, chopped
  • 3-4 c
    cooked chicken, chopped
  • 4
    green onions, chopped
  • 1 c
    chow mein noodles
  • 1 c
    almonds, slivered
  • 1/4 c
    poppy seeds (optional)
  • DRESSING
  • 1 c
    canola oil
  • 8 Tbsp
    red wine vinegar
  • 2 tsp
    salt
  • 1 tsp
    fresh cracked pepper
  • 8 Tbsp
    sugar, (or equilavant of splenda)

How To Make nanny's chow mein chicken salad

    In a large bowl, toss together, lettuce, green onions, almonds, poppy seed, & chicken breast.

    In a dressing mixer, add all dressin ingredients, & mix well. Just before serving, add chow mein noodles and dressing. Serve immediately.
