I get A LOT of requests for this! Has more flavor when chicken is boiled with skin on. When you sample it, use a clean utensil each time. Enzymes in saliva will cause the mayo to get watery. If it’s a little dry before you serve it, add more mayo and mix gently

How To Make mom’s favorite chicken salad

1Boil chicken breasts in a pot of salted water with skin on till done

2Remove chicken from pot, remove skin and let cool
-
3Cut chicken into cubes, put into a bowl, sprinkle lemon juice over it. Cover it with a layer of minced onion and then a thick layer of mayonnaise.

4Add finely chopped celery and mix well. Cover with Plastic Wrap and refrigerate overnight
