low-fat snack with fresh shrimp spread, The cucumber slices are a great way to have a healthy snack instead of crackers. Cucumber and summer squash slices work for other spreads too;like egg salad or tuna or chicken salad.

Ingredients

  •   8 oz
    unsweetened crushed pineapple, drained
  •   1 pkg
    mini salad shrimp, rinsed and drained
  •   1/4 c
    reduced-fat mayonnaise
  •   1 Tbsp
    finely chopped green onion
  •   2 tsp
    dijon mustard
  •   1 1/2 tsp
    minced fresh dill
  •   1 medium
    8-inch cucumber, cut into 1/4 inch circles,skin on and scored

    fresh dill sprigs for garnish

How To Make

    Combine in a bowl the pineapple,shrimp, mayonnaise, onion, mustard and dill. Spoon onto cucumber slices. Garnish with dill sprig or sprinkle with dried dill weed.

    Note: To score cucumber: Before slicing - take a fork and with the tines scrape them down the length of the cucumber or squash exposing the white of the veggie- until you have scored it all around then slice.
