    leftover chicken breast, chopped
  • 1/4 c
    celery, chopped
  • 1/4 c
    red onion, chopped
  • 1
    green onion, chopped
  • 1/2
    apple, chopped
  • 1/2 c
    walnuts or pecans, chopped
  • 2 slice
    crisp bacon
  • 1
    hard-boiled egg, optional
  • 3 large
    dollops of mayonnaise (to taste)
  • 1 Tbsp
    mustard
  • ·
    coarse salt and fresh ground pepper
  • ·
    (also optional) sweet pickle relish

How to Make Chicken Salad For 2

Step-by-Step

  1. Add chopped vegetables, apple and nuts to chicken. Crumble in bacon. (Add chopped hard-boiled egg, if you like.)
  2. Add mayo, mustard, salt and pepper.
  3. Chill and serve. SO delicious!
