Ingredients For almond, chicken and dried apricot salad

  • 1/4 c
    almonds, whole
  • 1 c
    chicken breast, sliced, cooked, skinless, cooked without salt
  • 1/2 c
    dried apricot quarters
  • 1 stalk
    celery, chopped
  • 1/2 c
    fat-free plain yogurt
  • 2 Tbsp
    fresh cilantro, coarsely chopped
  • 1 Tbsp
    dijon mustard
  • 1 tsp
    orange zest
  • 1 tsp
    honey
  • 2
    whole-wheat pitas

How To Make almond, chicken and dried apricot salad

    Preheat the oven to 300*F. Place almonds on baking sheet for 7-8 minutes, or until roasted. Let almonds cool.

    In a bowl, mix almonds and remaining ingredients. Spoon 1/2 cup chicken salad into each whole-wheat pita half. May be served on mixed greens.
