"Since the ingredients in this soup are so simple, using the highest quality ingredients you can will give you the best flavors. 28 ounce can whole peeled tomatoes, preferably San Marzano
2 tablespoons olive oil
1 teaspoon brown sugar
salt and pepper
1 head garlic
1 tablespoon butter
1 small onion, chopped (about ¾ cup)
1 carrot, peeled and chopped
2 cups low sodium chicken stock
¼ cup loosely packed fresh basil, chopped
1-2 ounces soft goat cheese (chèvre)
