360 g 1 ½ cups warm water

440 g bread flour

30 g g whole wheat flour
•
30 g ¼ cup all purpose flour
•
9 g 1 ½ tsp fine sea salt
•
¾ cup mixed pitted olives
•
2 g 1 tbsp picked thyme leaves
•
