How to Make Mint Extract

  1. Pack leaves flat in the bottom of a glass jar and cover with vodka. put in a cool dark place for about a month. Check for flavor. If you want it stronger just set back for another week. Take out and put through a seive and bottle your extract.
  2. A great gift in a basket with other extracts and seasonings.
  3. Bonus recipe for use with the peppermint extract you just made

Peppermint Cream Coffee Flavoring You can Make Yourself
    ■1/2 Cup Dutch process cocoa
■3/4 Cup International Delight Coffee Creamer (I like the Breve Sweet Cream flavor)
    ■3/4 Cup Sugar
    ■1/2 tsp. peppermint extract

Blend all the ingredients together and store in an airtight jar and you’ll have enough to flavor your coffee for the couple weeks around Christmas. Fabulous way to transform your cup of java into a delightful holiday treat!
