Using a vegetable peeler, peel fruit carefully, removing only the peel. Spread peel on a paper towel lined pan. Place in a preheated 175°F. oven and dry peel in oven for 1 1/2 hours. Peels should be leathery. Air dry for 24 hours.
Mix with remaining ingredients and pack into jars.
To use remove lid or put 1 tablespoon into a pan and add boiling water.
3 cinnamon sticks
3 bay leaves
1/4 C. whole cloves
1 quart water
Combine all ingredients in a saucepan and bring to a boil. Reduce heat and simmer as long as desired. Check often and add additional water if necessary. Mixture may be stored for several days if refrigerated and reused.
