Who doesn't love tacos! We need to cut down on the red meat in our diet as much as possible, but we are not willing to give up our favorite food: Tacos! So I created this recipe, and if you don't mention it, then no one will suspect that the tacos are made with ground turkey! This recipe is packed with flavor from the pepper jack cheese and is made just a little different than the traditional beef tacos. Guess what, we like them better, and they are better for your health, too! Enjoy!

Ingredients

    fresh ground turkey

    liquid smoke--natural mesquite flavor
  • 1/2 tsp
    beef bouillon granules
  • 1 Tbsp
    a-1 sauce
  • 1 Tbsp
    worcestershire sauce

    white or yellow corn tortillas
  • ·
    olive oil for frying

    paper towels

    cup of grated monterey jack cheese

    cup of grated pepper jack cheese

    romaine lettuce shredded
  • 1
    white onion diced

How to Make BONNIE'S TURKEY TACOS

Step-by-Step

  1. I do my prep work first and then it goes together really fast. I use 2 divided dishes for the vegetables and cheeses and then assemble the tacos after the tortillas are fried.
  2. Grate the 1 cup of monterey jack cheese and the 1/2 cup of pepper jack cheese. Mix the two together until well combined.
  3. Wash the romaine lettuce. I cut it fine with a sharp knife, like it is shredded. Dice the onion and tomatoes; put the vegies and the cheese mixture in the divided dishes and set in the refrigerator.
  4. You will need a large pan for the taco meat and a medium pan to fry the tortillas.
  5. Place the 1 1/4 pound of ground turkey in the pan over medium heat. Put the 1/2 teaspoon of beef bouillon granules in the cup of water and set aside.
  6. Then add to the meat 1/8 tsp of mesquite flavored liquid smoke (more is not better!) Add a-1 sauce, minced garlic,worcestershire sauce, taco seasoning mix, salt and pepper to taste.
  7. When the meat is lightly browned, add the one cup of water and beef bouillon to the pan and stir. Turn the heat to simmer.
  8. Taste the meat to see if it needs more taco seasoning or salt and pepper. The meat is ready to serve as soon as the water is reduced. Keep it hot while you fry the tortillas. You can add a couple of spoons of water to keep it moist. Don't let it dry out.
  9. Fry the tortillas in hot oil, folding to make a shell until golden brown and then drain on paper towels. I cook the shells according to my family's preference. Some like them soft, others like them crispy. The boxed shells just don't taste the same.
  10. When the shells are fried, assemble the tacos with the meat first, onion, tomato, lettuce and cheese, and taco sauce if desired. We like ours piled high with the vegies.
  11. Good with avocado, sour cream, refried beans or whatever else you might like.
