Homemade shepherd's pie is a heavenly dinner when the weather gets cooler and this turkey shepherd's pie is fantastic. It has rustic vegetables that are cooked with ground turkey. Then, it's baked with a layer of creamy potatoes on top. Using ground turkey (rather than beef or lamb) lightens up the calories but not the flavor. We loved this easy shepherd's pie recipe.

Ingredients For turkey shepherd's pie

  • 2 lg
    potatoes, peeled and cut into 2-inch pieces
  • 1/4 c
    Velveeta cheese, cubed
  • 1 Tbsp
    butter, softened
  • 2 Tbsp
    olive oil
  • 1 c
    white onion, diced
  • 2 md
    carrots, chopped
  • 2 md
    celery stalk
  • 1 lb
    ground turkey
  • 3 Tbsp
    all-purpose flour
  • 1 Tbsp
    rosemary, dried
  • 1 tsp
    thyme, dried
  • 1/2 tsp
    salt
  • 1/4 tsp
    black pepper
  • 2 c
    unsalted chicken stock

If you would like to pipe on the potatoes to make the shepherd's pie look pretty (like we did), add 2 more Tbsp of butter to the potatoes to make them even smoother and pipeable.

    Preheat oven to 400ºF.
  • Potatoes in a pan with cold water.

    Place potatoes in a large saucepan and pour in enough water to cover potatoes.
  • Boiling the potatoes until fork tender.

    Set pan over high heat and bring to a boil; reduce heat to medium and simmer 10 minutes, until potatoes are fork-tender.
  • Draining the potatoes.

    Drain potatoes.
  • Adding butter and cheese to the potatoes.

    Transfer to a large bowl. Add Velveeta chesse and butter. Mash until smooth.
  • Adding salt to the potatoes.

    Season to taste with salt and set aside.
  • Heating a skillet with oil.

    Meanwhile, heat oil in a large skillet over medium-high heat.
  • Cooking onions, carrots, and celery.

    Add onion, carrots, and celery. Cook until soft; about 3 minutes.
  • Adding ground turkey to the pan.

    Add turkey and cook until browned, breaking up the meat as it cooks; about 5 minutes.
  • Adding flour and seasoning to the pan.

    Add flour, rosemary, thyme, salt, and pepper; stir to coat. Add broth and bring to a simmer. Simmer until mixture thickens (about 3 minutes).
  • Turkey mixture transferred to a pie plate.

    Transfer turkey mixture to a 9-inch, deep-dish pie plate.
  • Piping on mashed potatoes.

    Spread mashed potatoes over top and using the back of a spoon, make decorative swirls over the top. Bake until potatoes are golden, about 30 minutes.
