This is something to do with the leftovers from your Thanksgiving dinner. My husband looks forward to them before Thanksgiving gets here. I almost feel silly for posting this because it's so easy... LOL!

Blue Ribbon Recipe

Reinvent your holiday leftovers with these adorable turkey pot pies. They're the perfect size for one person. Made with whatever extras you have on hand, a nice flaky crust holds the ingredients inside. You can use your favorite pie crust recipe or use a store-bought one (which makes these even easier to prepare). Those who don't like leftovers will enjoy these turkey pot pies. If you don't have enough leftover gravy, use a jar of turkey gravy to prevent the pies from becoming dry. We made some in mini-muffin tins and others in a regular muffin tin and both sizes were tasty.

How To Make turkey pot pies

  • Cutting circles out of pie crust.

  • Pressing dough circles into a cupcake tin.
    2
In your cupcake pan, place circles inside and press gently being careful not to break the dough. (No need to spray the bottoms or sides.) If you want to make larger pot pies you can make them in ramekins or the larger 6 cupcake pans. Just roll your dough out to a larger circle.
  • Chopped turkey placed in the cupcake tin.
    3
Place some chopped turkey in the bottom 1/4 the way up.
