I found this recipe in one of the Gifts-in-a-Jar recipe books (Soups). And it was REALLY good! Great for giving away when you hand out leftover Thanksgiving turkey.

Ingredients For turkey noodle soup

  • SOUP MIX:
  • 3 Tbsp
    chicken bouillon granules
  • 1 tsp
    pepper
  • 1/2 tsp
    dried whole thyme
  • 1/4 tsp
    celery seeds
  • 1/4 tsp
    garlic powder
  • 1 - 2
    bay leaves
  • 4 c
    tri-colored spiral pasta
  • ADDITIONAL INGREDIENTS:
  • 2
    carrots, diced
  • 2
    stalks of celery, diced
  • 1/4 c
    onion, minced
  • 3 c
    turkey, cooked and diced

How To Make turkey noodle soup

    ***Note – This is a Gifts in a Jar Recipe, so the mix can be made ahead of time and given as a gift, with a tag attached explaining the rest of the process.

    To prepare the mix: Layer the mix ingredients in the order given into a wide-mouth 1 quart canning jar. Set the bay leaf against the side of the jar before filling with noodles. Attach a gift tag with the cooking directions.

    To prepare the soup: Place the mix in a large soup pot. Add 12 cups of water. Add the carrots, celery and onion and bring to a boil. Cover, lower heat and simmer for 15 minutes. Discard the bay leaf. Stir in the turkey and simmer an additional 5 minutes.
