This is an excellent recipe for all that leftover turkey! After a couple of days of eating Turkey sandwiches, pot pies, and soup, this is a great new twist to the same old same old. It's quick, easy, and delicious. It doesn't taste like you are eating turkey. It tastes like Chinese fried rice. My family can't eat this enough. I make it once a week. You can use leftover chicken if you don't have turkey. I hope you love it as much as we do!

Ingredients For turkey fried rice

  • 2 Tbsp
    peanut oil
  • 2 Tbsp
    butter
  • 1 c
    cooked turkey, large dice cut (leftover)
  • 1/2 c
    cooked peas (leftover)
  • 1/2 c
    onion, raw, large dice cut
  • 1 clove
    garlic, chopped
  • 1/2 c
    fresh mushrooms, sliced, cut in half
  • 3
    eggs, scramble with a fork
  • 3
    green onions, chopped
  • 4 c
    jasmine rice, cooked, cold or cooled
  • soy sauce, low-sodium
  • sea salt & pepper
  • garlic powder
  • onion powder

How To Make turkey fried rice

  • 1
    Leftover cold rice is always best. But if none, make 4 cups (prepared) of jasmine rice according to package directions.
  • Peanut oil, garlic, and butter in a wok.

    In a very large skillet or Wok, add peanut oil, butter, and garlic.
  • Adding mushrooms to the wok.

    Add mushrooms first (since they will absorb the flavors as they cook). Cook for 2 min.
  • Onions added to the wok.

    Add onions. Salt & pepper mixture.
  • Cooking eggs in the wok.

    Separate mixture to one side of the pan. On the other side add eggs and cook them like scramble eggs.
  • Mixing onion, mushrooms, and eggs together.

    Once eggs are cooked combine them with rest of mixture in pan.
  • Seasonings, turkey, and peas mixed together.

    Add turkey and season with garlic & onion powder. Then add peas. Stir mixture.
  • Rice added to the wok.

    Add cooked rice to pan.
  • Shaking soy sauce into the wok.

    Give a few good shakes of soy sauce on rice.
  • Mixing everything in the wok together.

    Combine rice with rest of ingredients in pan. Taste and season as needed.
  • Stirring in green onions.

    Add green onions and stir once or twice and serve.

    Variations: You can add or replace these suggestions. Swap out peas for carrots. Swap out mushrooms for bean sprouts. The trick is to not overload on the items and keep it simple.
