One taste of these turkey croquettes and you will want to make sure you have turkey leftovers. Fresh lime and cilantro add not only flavor but a real freshness to the croquettes. Jalapenos add a bit of heat. Those three ingredients alone give these a Southwest feel. Once fried, they're crunchy on the outside. Baking them in the oven warms them thoroughly. A great way to reinvent Thanksgiving leftovers. Serve with your favorite condiment.

Ingredients For turkey croquettes (after thanksgiving day treat)

  • 2 c
    turkey, diced
  • 2 Tbsp
    fresh cilantro, chopped
  • 1/2 tsp
    fresh chives, chopped
  • 1
    fresh red or green chili (serrano or jalapeno)
  • 1 c
    bread crumbs, fresh
  • grated zest of 1 lime
  • 2 Tbsp
    fresh lime juice
  • salt and pepper
  • 3 Tbsp
    heavy cream or turkey gravy
  • 1 lg
    egg, separated
  • 1 tsp
    cold water
  • 1/4 c
    fine yellow corn meal
  • 1/4 c
    olive oil

We recommend flattening these thinner because they are easier to cook that way. If your mixture is too dry, add an extra egg yolk and a touch more cream until it's the right consistency.
  • Turkey, cilantro, chives, scallions, chili, bread crumbs, lime zest, lime juice, and gravy in a bowl.

    Put diced turkey in a food processor and pulse until finely chopped. Transfer to bowl and add cilantro, chives, scallions, chili, bread crumbs, lime zest, lime juice, and gravy.
  • Egg yolk added and mixed together.

    Mix until well combined and add egg yolk.
  • Mixture formed into patties.

    With wet hands form 8 patties. Cover with plastic wrap and chill for 30 minutes.
  • Dipping patties into egg white mixture.

    Mix egg white and water. Dip patties in egg mixture.
  • Coating patties in corn meal.

    Coat them in corn meal.
  • Pan frying the patties.

    Cook until golden, about 2 minutes on each side.
  • Partially cooked patties on a baking sheet.

    Transfer to a sheet pan and put in the oven to heat thru, about 5 minutes.
  • Inside of the Turkey Croquettes.
