I like turkey and instead of buying a whole turkey for just 2 people, I buy turkey breast, this is easy to prepare and has a nice flavor instead of just roasted,,,the slaw is also a little different and nice and crunchy

Ingredients For turkey breast with slaw

  • 1/2 c
    plain low fat yogart
  • 1 Tbsp
    curry paste
  • 3 clove
    minced garlic
  • 1 Tbsp
    grated ginger root
  • 2 lb
    skinless, boneless turkey breast
  • slaw
  • 4 c
    nappa cabbage thinly sliced
  • 2 md
    carrots, peeled and grated
  • 2
    apples peeled and diced.
  • 2
    green onions sliced thin
  • 2 sm
    pepeppers 1 red and 1 yellow or green , sliced thin
  • 1/4 c
    fresh cilantro chopped
  • 1/2 c
    plain yogurt
  • 2 Tbsp
    white wine vinegar
  • 2 Tbsp
    sugar
  • 1/2 tsp
    cumin seeds
  • 1/2 c
    sour cream or mayonnaise
  • salt and pepper to taste

How To Make turkey breast with slaw

    In bowl stir together yogurt, curry paste, garlic and ginger...rub all over turkey refrigerate for at least 1 hour.

    In separate bowl combine all the vegetables and in smaller combine the dressing ingredients and whisk together, pour over vegetables and toss until well combined.
