turkey and pasta in mushroom asiago sauce

I just threw this together with what I had in the house. I liked it so much, I decided to make a recipe out of it!

Ingredients For turkey and pasta in mushroom asiago sauce

  • 2 c
    cooked turkey, cut into bite size pieces
  • 1 box
    (8 oz.) rotini pasta
  • 1 Tbsp
    butter
  • 1 Tbsp
    olive oil
  • 16 oz
    mushrooms, cleaned and sliced
  • 1 c
    skim milk
  • 1 c
    fat free half & half
  • 1 c
    chicken or turkey broth
  • 1 tsp
    sweet paprika
  • 1 tsp
    garlic powder
  • 1/2 c
    grated asiago cheese
  • salt and ground pepper to taste
  • fresh chopped parsley (optional)
  • extra grated asiago cheese (optional)
  • 1/3 c
    all purpose flour

How To Make turkey and pasta in mushroom asiago sauce

    Cook pasta according to package directions. Drain and set aside.

    While pasta is cooking, melt butter with olive oil in a deep skillet. Sautee Mushrooms until softened.

    Pour broth into mushrooms.

    Mix together milk and flour until flour is smooth and incorporated. Pour milk mixture into skillet, stirring constantly.

    Bring to a simmer and continue to stir until starting to thicken. Add in cheese, paprika and garlic powder. Stir until cheese is melted and blended into sauce.

    Salt and pepper to taste.

    Stir in pasta and turkey, mix until well combined.

    Spoon into a pasta bowl and sprinkle with fresh parsley and extra asiago cheese if desired.
