This is a great, easy dish to prepare for a weeknight dinner, and if you keep most of the ingredients in the house, you don't need a special shopping trip to get what you need. We finished the pan and there was only 2 of us. Some warm bread and glasses of wine pare perfectly with this dish. And clean-up is simple and easy.

Ingredients For easy, breezy one pot dinner

  • 1 pkg
    lean ground turkey (1-1/4) lbs.
  • 3 md
    yukon gold and red potatoes (3 total) halved and sliced
  • 1/2
    red onion sliced
  • 5 md
    white or brown mushrooms sliced
  • 4 clove
    garlic, thinly sliced
  • 3 Tbsp
    olive oil, extra virgin, divided
  • 1/2 c
    red wine (your favorite)
  • 1 c
    pasta sauce (your favorite)
  • 1/2 c
    grated parmesean cheese
  • SEASONING BLEND
  • 2 tsp
    kosher or sea salt
  • 1 tsp
    fresh ground black pepper
  • 1 Tbsp
    garlic powder
  • 1 Tbsp
    onion powder
  • 2 tsp
    paprika
  • 1 tsp
    crushed red pepper flakes (optional)
  • 1 tsp
    chopped fresh basil

How To Make easy, breezy one pot dinner

    Gather all of your ingredients, wash and slice and get ready to roll.

    Put the potatoes in a medium bowl, add about 1/4 of the olive oil and 1/3 of the seasoning blend and toss to coat.

    Heat a large frying pan, non-stick, to medium high and add the potatoes. Cover and cook for 5 minutes until they start to brown.

    Add the onions, cover and cook for an additional 5 minutes, stirring occasionally.

    Sprinkle 1/3 of the seasoning blend on the ground turkey, break up and add to the pan. Add 1/3 of the olive oil, stir to combine, cover and cook an additional 5 minutes.

    In the bowl you used for the potatoes, add the mushrooms, and the remaining olive oil and seasoning blend and toss to coat. Add to the pan, with the red wine, cover and cook 5 more minutes.

    Add the pasta sauce, combine and continue cooking, uncovered, until the sauce is warmed through and the potatoes are tender. Sprinkle on 1/2 of the Parmesan cheese, turn the heat to low and let the cheese melt for a few minutes.

    Remove from the heat, sprinkle on the remaining cheese and serve.
