This is the first time I have used spaghetti squash. I had never realized such an amazing vegetable existed. Being introduced to this squash by one of my chef mentors from college, I wanted to try complementing this dish with a sauce recipe of my own. I hope you all enjoy this recipe as much as my family did.

Ingredients For chunky meat sauce topped spaghetti squash

  • 1 sm
    spaghetti squash
  • 1/4 c
    butter, unsalted
  • SAUCE:
  • 2 c
    spaghetti sauce
  • 6 oz
    tomato paste with garlic
  • 2/3 c
    unsalted chicken broth
  • 2 tsp
    white vinegar
  • 2 tsp
    garlic powder
  • 1 sm
    onion, coarsely chopped
  • 14 oz
    turkey kielbasa

How To Make chunky meat sauce topped spaghetti squash

    Preheat oven to 350 degrees. Stab Spaghetti Squash in various places, with a skewer, to let steam out when baked. Place Squash in an 8x8 baking dish. Let bake in fully, preheated oven for 50 minutes.

    For Sauce: combine spaghetti sauce, tomato paste, broth, vinegar and seasonings in a medium saucepan. Bring to a boil. Add onions and kielbasa. Simmer sauce for about 25 minutes.

    Take spaghetti squash out of the oven and let sit for 5 minutes before handling. using two oven mitts, move to a cutting board. Cut in half, in the middle, with a bread knife (serrated edge). Carefully scrape out the pulp and seeds in the center. *** May need an oven mitt to handle the squash.***

    Using a fork, loosen the spaghetti from the skin of the squash and place into a medium sized bowl. Add butter and mix thoroughly until melted.

    Place your spaghetti in a bowl and top with chunky meat sauce. You are now ready to serve and eat this delicious dish! Enjoy!
