    garlic, minced
  • 1 1/2 c
    onion, thinly sliced
  • 4
    flour tortillas, 10"
  • 1/2 tsp
    sea salt
  • 1 lb
    pork tenderloin, trimmed
  • 1 tsp
    brown sugar
  • 1 c
    red bell pepper, chopped
  • 1 Tbsp
    olive oil
  • 1 c
    frozen corn
  • cooking spray
  • 1 Tbsp
    chili powder

How To Make savory pork tacos with caramelized onions

    Preheat oven to 425°F. Combine chili powder, brown sugar and salt; rub evenly over pork. Place pork on a broiler pan coated with cooking spray. Bake for 20 minutes. Remove pork from oven; let sit 5 minutes before slicing. While pork cooks, heat oil in a large skillet coated with cooking spray over medium heat. Add garlic and onion; sauté, stirring frequently, until onions are deep golden; about 25 minutes.

    Remove onions from pan and set aside. In same pan, sauté corn for about 3 minutes, until cooked and slightly browned. Warm tortillas in skillet, 15 seconds on each side (or microwave according to package instructions). Fill each tortilla with about 4 oz. pork; divide sautéed onion, corn and chopped red pepper evenly among each tortilla.
