healthy and delicious fish tacos

Baking the fish like this gives it a nice crispy coating without frying it in unhealthy oil.

Ingredients For healthy and delicious fish tacos

  • THE FISH
  • 1/2 lb
    white fish, any variety you like
  • 1 c
    cornflake crumbs
  • 1 tsp
    lemon pepper
  • 1/2 tsp
    salt
  • 1/8 tsp
    ground pepper
  • 1/2 c
    all purpose flour
  • 2
    egg whites
  • 1/4 c
    skim milk
  • 8
    flour tortillas (preferably high fiber or whole wheat)
  • 1-2 c
    shredded cabbage or cole slaw mix
  • 1/2 c
    sliced green onion
  • fresh, chopped cilantro
  • diced tomato
  • plain, nonfat greek yogurt or sour cream
  • fresh salsa

How To Make healthy and delicious fish tacos

    Preheat oven to 450 degrees. Place a baking rack over a foil lined baking sheet and spray with a non-stick cooking spray.

    Cut fish into bite sized pieces.

    Add flower to a shallow dish.

    In a second shallow dish, combine cornflake crumbs, lemon pepper, 1/2 tsp. salt, 1/8 tsp. black pepper.

    Beat egg whites and milk in a third shallow bowl.

    Coat pieces of fish on all sides in flour, shaking off any excess.

    Dip in coated fish pieces into egg mixture then roll into crumbs, coating well.

    Place coated fish on prepared baking rack. Bake in a preheated 450º oven for 8 minutes or until fish is crisp and cooked through.

    In the mean time, Spray a nonstick skillet with cooking spray and lightly cook tortillas until slightly browned. Keep warm.

    To make tacos, add fish to tortillas and top with favorite toppings such as the one's suggested in the ingredients list.
