This recipe came from my sister years ago, when she was raising her children. It was easy, and yet it was very tasty! I generally make this on Cinco de Mayo every year, and that's what I'm doing today! BTW: Leftover shredded chicken freezes well!

Ingredients For easiest ever chicken tacos

  • 1 to 2 lb
    boneless, skinless chicken breasts
  • 16 oz
    thick and chunky salsa
  • cooking spray

How To Make easiest ever chicken tacos

  • Cooking spray, and a spoonful of salsa.

    Prepare the inside of your crock pot by spraying lightly with cooking spray.
  • Chicken topped with salsa.

    Spread a large spoonful of salsa on the bottom of the crock pot. Add the chicken breasts, and cover with remaining salsa.
  • Shredded chicken, and ready to serve!

    Set the crock pot on low, and cook for 8 hours. When the chicken is done cooking, shred apart like you would for pulled pork.

    We like these served on warmed flour tortillas, and topped with the usual lettuce, tomatoes, sliced green onions, cheese, and of course sour cream.
