  • 1-1/2 lb
    chicken breast-cooked and shredded
  • 1/2 medium
  • 1 can(s)
    black beans- rinsed and drained
  • 1 can(s)
    15 oz diced tomatoes drained
  • 1 can(s)
    refried beans-heated to spread
  • 1 tsp
    chili powder
  • 1/2 tsp
  • 1/2 can(s)
    10oz diced tomatoes with green chilies
  • 1 c
    long grain white rice
  • 2-1/2 c
    chicken broth
  • 1-1/2 c
    shredded cheese
  • ·
    corn or burrito size tortillas

How to Make Chicken & Rice and beans Taco Skillet Meal


  1. Secure a deep skillet. On Med/high heat. Add 1-2 T. olive oil. Add in chicken until no longer pink. Add chopped onions. Stir until translucent.
  2. Add in beans, tomatoes. Sprinkle in spices and stir to combine. Add in rice. stir. Slowly add in Chicken Broth. Cover. Heat to boiling, then reduce to simmer until all liquid is absorbed. about 15. min.
  3. Heat up refried beans and Corn or flour burrito size tortillas. Spread refried beans on tortilla. Fill tortilla with chicken rice mixture. Add cheese. Enjoy!
  4. Or Sprinkle cheese. melt, and serve it up.
