I love Mexican food, but honestly, there aren't very good Mexican restaurants in my area. This is a great recipe that allows me to enjoy delicious Mexican food at home! Enjoy!

Ingredients For beef enchiladas

  • 1 1/2 lb
    ground beef
  • 1 sm
    onion, chopped
  • 3 clove
    garlic, minced
  • adobo powder to taste
  • pepper, to taste
  • 2 can
    red enchilada sauce
  • 10
    corn or flour tortillas. whichever you prefer. (if using corn, wrap them in foil and warm in the oven until they are soft so they don't break when you roll them.)
  • 2 c
    shredded mexican blend cheese
  • GARNISH SUGGESTIONS
  • 1 Tbsp
    chopped, fresh cilantro
  • 1/4 c
    sliced green onion
  • 1/4 c
    sliced black olives
  • dollop of sour cream
  • 1/4 c
    diced tomatoes

How To Make beef enchiladas

  • 1
    Brown ground beef along with onion and garlic. Drain grease off and season with adobo powder and ground pepper. Pour in half a can of enchilada sauce.

    Pour 1 can of enchilada sauce into a shallow dish. Dip corn tortillas one at a time, covering both sides with sauce.

    Place 1/2 cup of beef mixture into the center of each tortilla and roll up. Place seam side down into a 9x13 baking dish that has been sprayed with cooking spray or lightly greased.

    Cover with aluminum foil and bake at 350 for 15-20 minutes. Uncover and pour remaining enchilada sauce over enchiladas and top with Mexican cheese. Bake uncovered for another 10 minutes or until cheese is nice and melted.

    Garnish with cilantro, green onion, black olives and a dollop of sour cream if desired. Serve with beans, rice and/or corn.
